Hello again there! So my blogging has become a little sporadic lately thanks to the sprint known as Week 5 Midterms. Thank god they are over because now I am a free woman! So in lieu of showing you pictures of countless Luna Bars and cups of coffee consumed in the library, I have a recipe to share packed with all that is healthy and good.
PSA: I am well aware that sugar + caffeine is not the most nutritious diet, but whatever gets you though, right?
Now that are my hell week is over, I plan on consuming loads of vegetables and watching some trashy television. This soup might just do the trick and I can easily cozy up on the couch with a steaming bowl of this goodness. Killing two birds with one stone is my specialty.
Hearty Kale and Lentil Soup
Ingredients
2 tablespoons olive oil
1 yellow onion, roughly chopped
6 ribs of celery, roughly chopped
6 carrots, roughly chopped
3 cloves of garlic, chopped
2 cans of diced tomatoes
4 cups of water
1 cup lentils
dried basil
dried oregano
6 oz chopped & destemmed kale
salt + pepper
Directions
In a large on medium high heat add olive oil. Once the oil is heated add onion, celery, carrots, and garlic. Cook down for about 15 minutes until the veggies are soft. Add tomatoes, water, lentils, and herbs. Cover and let simmer for 20 minutes. Add kale to let wilt down for 1o minutes. Season with salt + pepper to taste.

Ha, I have been so busy at work slash…life… too, and Luna bars have been saving me. I totally justify it by saying “But look! it has all these vitamins and minerals!”
This soup sounds awesome, though. I have been loving lentils lately and looking for a good way to work them into a soup!!
