Peas and Crayons

Hello! First of all, thank you guys so much for all your supportive comments! It feels to great to be in such a good place in my life and to hear from all of you!

Moving on to What I Ate Wednesday, I actually followed the theme and did a pretty adequate job of getting a ton of vegetables in my diet compared to they way I ate this weekend :) So here ya go….IMG_2051

Breakfast

Oatmeal, wheat bran, protein powder, banana, blueberries, & peanut butter + COFFEE.  Literally this is my favorite breakfast right now and I can’t get away from it.  IMG_2053

Snack

Chocolate Soy Milk + Peanut Honey Pretzel Luna Bar.

So I had Physical Therapy this morning and it kinda kicked my ass.  I’m going to do a 2 month post-op blog post soon so I don’t want to spoil the surprise, but most of my restrictions have been lifted so that means I can actually get a work out in PT.  My muscles were still trembling 4 hours after which is awesome, but I definitely needed some extra food!IMG_2048

#LuluLunch

For some reason my Trader Joe’s has been completely out of kale for the past week! Sob Story, I know.  So I grabbed a new to me item that looked the most similar to kale, their Southern Greens Blend.  I’m definitely not a southerner, nor have I ever tried collard greens, but this blend contains spinach, mustard, turnip, and collard greens.  And it wasn’t half bad! Since I was going to be on campus, I cooked down the greens with some mushrooms, then threw on some leftover roasted eggplant and chicken, and finally topped with avocado and honey mustard dressing and put it in a tupperware container.  Along with an orange and mass quantities of water, this was a stellar #LuluLunch.

Dinner

Leftover Hearty Kale and Lentil Soup with a little extra spinach in there + Turkey Grilled Cheese.

Funny story, when I was little my dad used to make us grilled cheese sandwiches on the weekends.  But, for some reason my sisters and I thought they were called “Girled Cheese” or “Boyed Cheese” depending on if they were sliced down the middle, or diagonally.  I’m not sure if this sammie fits the description for Boyed Cheese vs. Girled Cheese, but I do know it was delicious.  I used a super nutty bread spread with dijon mustard and avocado then piled high turkey, white cheddar, and spinach then put on the george foreman grill.  Comfort food at its finest.  IMG_2057

Dessert

I’m on a mission to try all of Chobani’s new flavors! So far I’ve tried the Pear and Coffee with Dark Chocolate, and when I spotted their Carmel with Pineapple Chunks, it went straight into my grocery cart.  HOLY MOSES this stuff is sweet! I don’t think I could eat it by itself, so I topped it with peanut butter and dipped apples into the mixture.  As a little after dinner dessert, this stuff is great!

    I am digging your morning snack! Chocolate milk and a bar is my favorite type of snack! And obviously a #lululunch. I’ll be having a #luludinner!

    Okay, I’m dying laughing. When my brother was little, he used to say, “I don’t want a girl cheese! I want a BOY cheese!” Too funny.

  5. LOL, that is too funny about the grilled cheeses. I never thought about it that way but can def see how that would come about. Glad you are having a great week!

  6. Yum! Pretzel Luna Bar? I haven’t tried that one yet. Sounds SO good. I love the Chocolate Coconut one :) Definitely a favorite of mine.

  7. That snack of chocolate Silk + Luna bar combines two of my favorite products! I used to drink Silk a ton when I was on campus since they sold it at the Arbor and whatnot!

    I love your soup and sandwich dinner. Looks so hearty and filling, but still so healthy!

    Oh lord I love your idea to try all the chobani! That shall be my next step when I run out of the current bunch. And you can always catch my eye with a grilled cheese. Mmm. Looks good as usual!!

    Trader Joe’s ran out of my favorite too: Power to the Greens. They haven’t had it in A LONG TIME! Almost a month I think!

  11. All of your food looks so good! You should do a Chobani flavors review once you’ve tried them all–then I’ll know which ones to get hehe :)

  12. I totally don’t get the girl and boy sandwich thing…is because I’m British or just slow??? Hehe! Either way, you can’t beat a toasted cheese sandwich!
