Stress.  It happens to everyone.

You may have guessed by my spotty blogging lately that I have been a bit busy.  If not, I’m here to tell ya, I feel like a hamster running on one of those wheels that never stop turning.  I know it’s all worth it, and in FOUR short(LONG?!) weeks I will be a college graduate and be able to catch my breath.

This quarter has been a balancing act for me.  I loaded my class schedule because I wanted to “finish on strong note” and defy the typical senior-spring-quarter-I-don’t-care attitude.  This has definitely been a challenging quarter academically, but I am honestly so grateful that I CAN SIT DOWN to study for hours on end, because we all know that never happened pre-surg.  Not only am I able to spend more time studying, I am finally capable to add some extracurriculars back into my life.  I’ve been volunteering at a hospital helping out with aquatic therapy and start interning at another hospital in June! Exciting stuff.  And then there is always work.  Swim Teacher/Babysitter/Nanny/Wine Sales extraordinaire.  Yes folks, I really meant it when I said balancing act.

Moral of the Story.  I have been on the GO-GO-GO recently.  It’s awesome because I’m doing LOTS of awesome things, but  never having any free time can start to wear on you.  It may have taken an awesome cold for me to realize this, but when life gets too crazy, you simply HAVE GOT to step back and smell the roses.  Appreciate the little things that life has to offer. SLOW DOWN.

So I thought I would share the little things that have been keeping me going…..

But I’ll say a little bit more.  My roommates and I have had such opposite schedules that it became a rare occuranace to see them more than 2 times a week.  I know. Cray.  But, four of them are on the rowing team and had their last 2K this week.  For you non-rowers out there, a 2K is the standard test of speed and the length of most races.  To celebrate their last dreadful 2K test on the erg, I made a cake! And even better than the cake was that all 6 housemates were at home to eat the cake together.  I don’t think that has happened in three months or something ridiculous.

 I have made my way though all the Chobani flavors and while they are all great, I have been drooling over the Almond Coco Loco and Key Line Pie.  This might have something to do with the fact that both of these Flips include chocolate chips in the topping, but that’s just a guess.

Excuse me while I’m cheesing hardcore. Those damn endorphins.

But working out has been my saving grace.  Some days working out is not an option, but when I do have an hour I’ve been all about running, swimming, and water aerobics.

I obviously had to celebrate National Chocolate Chip Day and I can’ think of a better way than chowing down on a Chocolate Chip Cookie Dough Quest Bar and a LARRRRGE Iced coffee while studying the library.  That’s a lie, I can think of 100 better ways to celebrate, but this way was adequate for the time being.

Now I wish this were a beer, but I was on campus :) I was actually very impressed with these sparkling FruitWaters.  I’m not a huge fan of VitaminWater but I will give any carbonated drink a shot.  It was a pleasant surprise

I am more of a white meat girl, and roasting a whole chicken seemed quite intimidating to me, but my friend Lane came over and showed me her skills!  It was surprising not too hard and OH SO DELICIOUS.

IMG_2676 IMG_2654Roasting a whole chicken consequentially leaves you with A LOT OF CHICKEN to eat.  Go figure.

To make use of all my wonderful chicken I like to throw a tons of vegetables in a pan with my chicken and various toppings.  I’ve been eating one of these bowls as least once a day and I have to say, it is so nice to eat REAL FOOD that was not been packed up into tupperware.

So tell me, what do you turn to when you are stressed/busy?

Massaged Kale Sesame Salad May 13, 2013

It feels like an eternity since I posted a recipe! Since I’ve been lalalaloving prepping food for a week at time, photogenic food that is served on a plate (gasp) has been a rarity.  But, alas I finally took the time to measure out ingredients, plate my food, and drag my camera out to capture the occasion.  It was momentous.

In all reality, this recipe was motivated by the fact that I need to use up some kale that was about to go south and although I have heard great things about massaged kale, I had never prepared it that way myself.  So  I figured there was no time like the present.  I had also picked up a pineapple the other day at the grocery store and decided my kale salad was going to have to include that ingredient or else I would need to justify eating an entire pineapple by itself in one day.  So I decided to massage the heck out my kale, taking it from gritty and tough to smooth and palatable. And quite honestly, I am a fan!

Of course I made this salad and proceeded to put it in a tupperware to eat for the lunch the next day, but it looked nice when it was in a bowl!

Massaged Kale Sesame Salad

Ingredients

3 cups washed and destemmed kale, chopped

1 tablespoon sesame oil

1 tablespoon soyaki sauce

1 carrot, sliced

1/2 cup pineapple, chopped

1 tablespoon roasted sesame seeds

Directions

Measure out your kale and place in a bowl.  Drizzle the sesame oil and soyaki sauce over kale.  With your hands, gently toss the kale and begin to massage the kale. Yep you heard me, massage those little green leaves for 2-5 minutes, or until the kale reaches your desired consistency.  Toss with a carrot, pineapple, and sesame seeds.

 

Foodie Discoveries {V} May 8, 2013

Hello there! Long time to talk!

I have a theory about science majors, there are two types of people.  There are those who spend day and night studying and are constantly trying to compete for that A to get into med school.  Then there are those who keep some semblance of normal life, balance school with a social life.  I am afraid that I have been falling into the former category.  I have been a BUSY bee and sadly blogging has not been my number one priority.  But I only have 5.5 weeks of madness left!

In the meantime, I have stumbled upon some awesome food that I just HAVE to share with you guys!

IMG_2524  1.  Trader Joe’s Mango Juice Smoothie

I was babysitting a couple of weeks ago and the kids wanted hot dogs for dinner.  I’m not really a hot dog fan but I decided to suck it up and eat what the kids were eating.  Bad decision.  Thursday morning I woke up nauseated and running a slight fever. So I spent roughly 22 out of the next 24 hours sleeping.  It was awesome.

All I wanted to eat was carbs and juice, go figure.  I honestly can’t remember the last time I drank juice that wasn’t mixed with booze.  Trader Joe’s did not disappoint with this Mango Juice Smoothie.  It was acidic, fruity, and SUPER sugary which is exactly what I needed.

2.  Trader Joe’s Coconut Spray

YESSSSS!!! I am so glad I will no longer have to hoard coconut oil spray from Sprouts when I go home, now Trader Joes has their own version.

3.  Glucose Fuel

My brain needs glucose to study! Caffeine helps too :) Iced Coffee + banana + Barney butter packets I snagged from the Natural Foods Expo has been a favorite snack of mine as well as the Maple Glazed Pecan & Sea Salt Kind Bar.

4. PB&J Eggs

I know this one sounds weird, but I have been LOVING this meal lately.  I’m not really a “sweet” egg person, french toast is not my favorite and syrup anywhere close to my bacon grosses me out.  But for some reason, egg whites with cinnamon topped with peanut butter, jelly, and a banana has been doing it for me! The major upside of this breakfast is that you can throw your eggs between some toast and make a super portable sandwich.

5.  Food Offerings from my sister

My sister stopped by and brought me food! I’ve been to Cowboy Cookie before so I was so excited to eat another massive cookie.  Cal Poly (her school) makes their own cheese, and she knows how I feel about smoked gouda (LOVE) so she brought me some of that as well as Lace Swiss.  And coconut spread? So tasty when spread on a piece of fresh-baked bread.

6.  My 6 favorite foods all in one meal

Roasted kabocha + brussels, sourdough + avocado, eggs + smoked gouda

Those are my top 6 favorite foods.  I literally could eat this meal EVERY. SINGLE. DAY.

7.  Tupperware Meals

Since most of my meals have been consumed on the go, tupperware has been my best friend.  And sandwiches just so happen to be very tupperware friendly.  I kinda felt like I was back in elementary school eating this, but oh well, turkey, cheese, spinach, avo, and mustard on whole wheat bread tastes marvelous, regardless of age.

8.  Raspberry Lime Sparkling Water

I have a little addiction to sparkling water, but this flavor seriously stood out! I’m not sure if its new, or I just hadn’t noticed it, but the Raspberry Lime flavor was oh so tasty.

9.  Still food preppin’ like a boss

I think I am officially hooked on food prepping.  It is the only way I can manage to eat healthy meals during busy times and stay away from expensive meals out.

This past week I roasted brussels, sweet potatoes, BBQ chicken, made tofu taco “meat”, sautéed veggies, black beans, avocado green goddess dressing, and defrosted some black bean chili with butternut squash.  IMG_2591Also shout out to my girl Alyssa for food prepping!
